Easy Bruschetta

I am personally of the opinion that food doesn't have to be complicated to be good and valid. Being autistic, I've always struggled with being a picky eater. Sometimes, I really just want the most basic and simple thing I can think of and this is one of my favorite meals for those days.


Here's how I made it!


Pants' Simple Easy Bruschetta

Ingredients:

  • "Fancy" Bread: I usually treat myself to a "fancy" loaf of bread from the grocery bakery section. This time, I bought some 3 cheese crusted thing that was delicious!! I also like Rosemary Olive Oil loafs for bruschetta!

  • Roma Tomatoes: I only needed one because it was just me but I'd suggest 1 tomato for every 2 people you're serving, maybe + 1 or 2 extra if you like big portions!

  • Fresh Mozzarella Cheese: 1 ball or log per every 2 people should do ya. Fresh Mozzarella tastes amazing with this and it's a nice way to treat yourself ;)

  • Fresh Basil Leaves: I used 5 or 6 medium/small leaves total. But honestly it's as much or as little as you like on your portions.

  • Olive Oil: As long as you have a couple tablespoons of this, you ought'ta be fine.

  • Optional - Roasted Garlic: I totally forgot it this time but I absolutely love roasted garlic for these! I'll post up a recipe for that another time and then link it here!

Instructions:

  1. Preheat Oven to 425 f (218 c)

  2. Slice your Roma Tomatoes (as thin or as thick as you prefer).

  3. Cut your Basil. I like to roll up the leaves like a cute little scroll and then cut them into ribbons!

  4. Slice your bread into hearty slices (about 1.5 in thick).

  5. Lay bread on a baking pan and drizzle with olive oil (don't be shy with it!)

  6. Put bread in pre-heated oven for 6 minutes, then flip, then another 6 minutes or until bread is golden brown and gently crispy. Be careful not to over toast or the bruschetta will be too hard to bite into!

  7. Remove bread from oven, and serve with your toppings of choice! Personally, I like putting all my ingredients in their own little bowls (mise en place :D) and then building my bruschetta one-by-one at the table!

The best part about this particular simple recipe is how it can be added upon or edited easily. A lot of people like balsamic vinegar with their bruschetta. Others will chop the tomatoes into chunks and mix them with shallots or other things. For me, I like keeping things simple.
